Our Big Fat American Road Trip [V] (a picnic photo montage)

I'd say it's totally possible that someday I may really blog again. I had a super, amazing, memorable weekend, and hope to blog about it soon. Wednesday, perhaps? Someone hold me to it! If you follow me on Twitter, you already know what's up.  
Tomorrow for Halloween, Ger and I are going to his cousin's house for a little party. No dressing up though. Second year in a row, but I don't care. When it comes to Halloween, I can take it or leave it without much concern. Gerald's birthday is Tuesday. I'm making him a roasted chicken and chocolate chip applesauce cake. What kind of a weirdo-freak requests chocolate chip applesauce cake for a birthday cake? My boyfriend. I had no idea what he was talking about, but I googled the recipe and it's everywhere, so it maybe it's good. More on that later....

For now, here's a photo montage of Gerald and I eating lunch in the beautiful Teton Park woods. We got eaten alive by mosquitoes; these pictures made it worth it. Tripods & automatic timers 4 life.

Our Big Fat American Road Trip [IV]

Hi, y'all. I know it's been quite around here. I'm adjusting to my new job. Last week I started working my new schedule beginning at 7 am. So, like, I have to get up before 6. It's bonkers, I tell you, bonkers. Is this being a grown up? I guess so. I'll get the hang of it eventually.


We left Pinedale, Wyoming nice and early to head toward Grand Teton National Park. Spending time in the Grand Teton area was definitely a trip highlight. So gorgeous and picturesque. I hate that describing mountains seems cliche, and photos don't quite do it justice. The magnanimity of it all.

I Need Your Bedroom Eyes

I swear I was about to publish this when I recognized how well this song, which had come on randomly, fits with this post. Is iTunes psychic? Rad! 


I had grand plans to add a recipe blog tonight, but I'm too tired to write out a recipe. So instead I thought I'd post one of the first pictures of Gerald and I together. 
This is a picture from Friendsgiving 2009. He and I had been dating about two weeks, but were already bf/gf because we hopped right into that head first. I was kind of iffy about bringing him to Friendsgiving since we had been dating for such a short period of time, and it's not-so-cool to bring significant others who ain't gonna last. We all know how that worked out...

Gerry is away on a business trip right now, and I am missing him something fierce. Three nights alone seems like a long time after having spent all our nights together for three months. This big bed is too cold without him.* I'm ready for him to come home tomorrow. 




*Even though most of the time I complain about him giving off way too much heat!

Our Big Fat American Road Trip [III]

Gerry's car's check engine light kept coming on, so we tried to get up early(ish) in Denver so we could take it to the shop. Nothing was wrong other than his car was an old man workin' too hard. No big deal.

I have a college friend in Denver, so I called him up and we walked around the downtown area of Denver just chatting while he was on his lunch break. So good to see him, even if it was just for a little while.

The weather shaped up just as we were nearing Cheyenne. I talked Gerry into stopping so we could explore a little, even though we didn't leave Denver until late. He was grumpy about it, but I'm really glad we stopped. Downtown Cheyenne was pretty cute. The Wyoming population is so scattered, so it was interesting to see their big city.

We got into Pinedale, WY around 1am. As we were pulling into town their were so many drunken hooligans in the street. Apparently, it was Rendezvous Days, which started with something as historical as trappers and traders gathering, and has turned into a big drunken hullabaloo. The room there was awesome though, and we got some good beauty sleep in preparation for Yellowstone!

Cast Iron Eggplant Parmesan Bake

I'd say trying eggplant parmesan with ricotta (ruh-goat-tah is Gerry's insisted-upon pronunciation) was a revelation. I first had it in college when a homegirl's boyfriend-at-the-time made it for her, and I scavenged like any good college student does. From then on I've been sold that it is the best way to eat eggplant parmesan. Extra rich and cheesy.

I'm also 100 percent sold on baking eggplant instead of frying it. It's less messy, cheaper, healthier (to help balance out the cheese) and I think it's tastier. Frying eggplant in oil makes it soggier, which is a job marinara does well enough alone. Baking the eggplant keeps it a little more firm, and makes for a more satisfying bite. That's my two cents on that.

I made my own marinara using what I had on hand. You can go for the jar sauce if you're into that, but if you're diligent about keeping a relatively well-stocked kitchen, then take the time to make you're own marinara. It's relaxing. I made up a marinara; sautéing the ends of an onion and a yellow bell pepper with 2 minced garlic cloves in olive oil. Then I added 1/4 cup red wine (Zinfandel) and let that simmer. Next I used 1 small can of tomato sauce, 1 14.5 oz can diced tomatoes with garlic, 2/3 small can of tomato paste (leftover from lasagna), a 1/4 cup chicken stock, a teaspoon of sugar, a large handful of chopped fresh basil, 1/2 teaspoon dried italian seasoning, 1/4 teaspoon oregano and salt & pepper. I let it simmer for at least 5 hours. It yielded 2-3 cups of sauce. 

For the eggplant you will need:
an egg
flour
milk
grated parmesan
breadcrumbs (I only use panko because it makes things crunchier)
italian seasoning
s&p

Slice the eggplant about 1/4 inch thick. Liberally sprinkle eggplant with salt (preferably Kosher), and let them drain for 30-45 minutes. Doing this makes the eggplant less bitter, and gives it a better texture. Preheat oven to 350. Set up a plate with enough flour to dredge, beat an egg (maybe 2) with a few tablespoons of milk, and in another small bowl combine enough parm, panko and seasonings to coat the eggplant. Dredge, dunk, coat, and put them on a cookie sheet (coated with non-stick spray). Pop them in the oven for roughly 25 minutes or until golden brown. 

For the cheese mixture, combine:
12 oz ricotta cheese (I always use the part-skim)
a few tablespoons grated parmesan
1/2 cup shredded, flavorful white cheese (I used Kasseri because had been on sale. But you can use whatever you want)
1/4 cup basil, chopped
salt & pepper to taste
an egg

In a cast iron dutch oven, put a light layer of sauce, then add three slices of eggplant and top with a third of the cheese mixture. Repeat the process twice more, and top with more shredded cheese. Cover and bake in a 350 oven for 30 minutes, removing the lid after 20.

The Last of Summer

This is an outfit from early last week that I neglected to post because my computer started acting like it was going to blow up. It didn't, so here we are. I wore this outfit to hand in a few job applications, and go grocery shopping. It was in the mid-70's and sunny here last week, but the stereotypical Portland weather seems to have kicked in since. Can I handle this, guys? People always asked me before moving if I wanted to deal with all the rain, and I really brushed it off without much consideration, stating "it's better than snow." Jury is still out.

I wish boyfriend-man would have told me my cami was all ragamuffin-like, but he doesn't notice these things. Neither did I until I uploaded them. So excuse the dishevelment.

Ch-Ch-Changes

As you can see, things are looking fresh and new 'round here, and I couldn't be more excited about the polished, new look. mitten paws was long overdue for a makeover, and I'm so excited that Rachele of  The Nearsighted Owl agreed to help a girl out. Swing by her blog and tell her what a good job she did!

I'll be adding a new blogroll and an about me section in the near future, so look out for that. Rachele also made me some pretty new buttons, so grab one! Let me know if you add my button to your blog, and I'll be sure to trade with ya!

In other changes, I'm starting a new job tomorrow, and I'm pumped! No more hanging out in my pjs for absurd amounts of time. I'm joining the real world, and with a company I admire, which is obviously what I hoped for, but certainly not what I expected to find. I'm thrilled, grateful and lucky. Finding a job has been so difficult, and I'm ready to start actually working. It's not a moment too soon. This is my first full-time with benefits like an adult job; wish me luck!
